Spicy Vegetable Stir-fry

This week's tasty favorite can be found .....in the kitchen of my very wonderful and talented friend Sandra.   A truly inspired, mother of 4, she always finds ways to incorporate nutrient dense veggies into her family meals.  This is especially true for this recipe as follows:  



Ingredients:
-------------
4-5 medium fresh tomatoes
Handful of green beans
4  diced Asparagus
1 head of brocolli
1-2 zucchini
1 medium onion - chopped
1 garlic  clove - chopped
2-3 medium potatoes - cubed
4 chilli peppers - optional
1 tbsp fresh cilantro - chopped
1 tbsp fresh parsley - chopped
2-3 tbsp olive oil
1/4 tsp  cumin powder
1/4 tsp coriander powder
1/4 tsp thyme powder
2 tsp butter chicken paste
Salt and black pepper to taste

Instructions:
-------------
1. Cook cubed potatoes for about seven minutes and set aside
2. Sauté garlic and onions for one minute
3. Add chopped tomatoes and cook for two minutes
4. Add green beans, asparagus, zucchini, broccoli, and potatoes and cook for two to three minutes.  Add a little water if it starts to get dry.
5. Add cilantro, parsley, and all the other spices along with salt and black pepper to your liking to taste.  Let it cook for about another 5 minutes, and it's ready to Enjoy!
